So my menu and dishes represent my journey, with hints to my homeland, Puglia, and knowledge gathered during the experiences around the world. My dishes must always represent a triplicity. Colors that I love to bring out in my recipes and flavors that always have as their ultimate goal the harmony of light contrasts and different textures. The finish of the taste of every dish, whether sea or land, must be pleasant and not intrusive and recall the sip of a wine."
Claudio Lopopolo, born in 1990, comes from Puglia, from Bisceglie to be exact.
His first experiences began in his native land when he was very young. At the age of 18 he undertook various trips away from home, going to work during the summer and winter seasons with experiences in Trentino and Emilia Romagna. After he moves to London and Australia, he returns to Italy landing at the "Campo del Drago" restaurant gourmet of the Castiglion del Bosco in Montalcino. After six years, eager for new experiences, he moved to Florence in the kitchen of Pescatoria and then began his journey at the Relais Le Jardin Gourmet Restaurant as Executive Chef.
